     Potato Cheese Soup

Ingredients
6-8 potatoes, peeled & diced
2-3 carrots, sliced
1-2 celery stalks, diced
1 onion, chopped
1/4 c butter or margarine
1 can of cream of chicken soup, undiluted
2 c milk
1 8 oz pkg cream cheese
salt, pepper to taste
 
4 bacon strips, cooked & crumbled

Instructions
Place potatoes, carrots, celery & onion in large kettle, cover with water & cook until tender.
Meanwhile, in a mixing bowl combine cream cheese, butter and soup. Stir well. Add milk, salt, pepper & bacon.
Add mixture to vegetables & heat through.
For a thicker soup, I drain most liquid from vegetables before adding cream cheese mixture. I melt the butter and add softened cream cheese - it's easier to work with.
