     ZUCCHINI & CORN FRITTERS WITH CREME FRAICHE

Ingredients
1/2c plain flour
1/2c self-raising flour
2 eggs
1/2c yoghurt
1/2tsp castor sugar
420g can corn kernels, drained
2 small zucchini, grated coarsely
2 cloves garlic, crushed
1 small red onion, chopped finely
 
2tbsp fresh basil, chopped finely
1tbsp fresh tarragon, chopped finely
1/4c parmesan cheese, grated finely
2tbsp olive oil
3/4c creme fraiche
1/3c pine nuts, roasted
1/3c fresh baby basil leaves

Instructions
Combine flours in a large bowl. Whisk in eggs, yoghurt and sugar. Stir in corn, zucchini, garlic, onion, herbs and cheese. Season with salt and freshly ground black pepper. Stand for 15mins
Heat oil in a large frying pan. Cook heaped teaspoons of mixture, in batches, until browned on both sides. Cool on wire racks
Serve fritters topped with creme fraiche, pine nuts and basil leaves
