     Pan-Seared Chcken w/ Italian Salsa Verde

Ingredients
1T flour
1/4 t salt
1/4 t pepper
4-6oz skinless, boneless chicken breast halves
5t olive oil, divided
3/4 c parsley leaves
2T water
2T red wine viegar
1t minced garlic
 
1t capers
4-2in mint sprigs
1-2pz slice peasant bread, rust rmoved
over fettucine

Instructions
combine first 4 ingredients ina alarge ziploc; seal ans shake well to coat. heat 1T oil in a large skillet over mh heat. add chicken to pan; cook 6 min on each side or until done.
Place the remaining 2t oil, parsley, and remining ingredients except bread in a food processor, process until finely chopped. Tear peasant bread into pices; add to the processor, and process 4 sec or well belded. thinly slice ea chicken breast half, and serve topped w/ salsa verde.
