     Grilled Salmon w/ Apricot-Mustrad Glze

Ingredients
4 6oz fillets
1 1/2t minced garlic
1/2 t salt
1/4 t pepper
1/4 c apricot nectar
1/4 c apricot preserves
1T dijon mustard
1 1/2t whit wine vinegar
 
1 1/2 t honey
1/4 t salt
1/4 t pepper
serve w/ parmesan-spinach orzo pilaf 8 oz

Instructions
prepare grill. sprinkly fillets evenly w/ garlic, 1/2t salte, 1/4 t pepper. cover and frig 15 min. to prepare glaze, combine nectar and next 6 ingredients, in a small soucepan; bring to a boil. reduce heat, and simmer until reduced to 1/4c-10min. remove from heat. Place fillets, skin side up on grill coated w/ cooking spray. grill 2 min; carefully turn over, and grill 4 min or fish flakes easily when tested w/ fork. brush ea fillet w/ 1 T glaze. grill 30 sec
8 oz orzo cooked. add 3 oz fresh baby spinach and 1 1/2 t minced garlic; sitr well to cobbine. coer and let stand 4 min. stirring twice to wilt spinach. add 1/2 t salt and 1/2 t pepper stire in 1/4 c parmesan cheese.
