     Glazed Pork and Parmesan Couscous

Ingredients
1 lb pork tenderloin -1/2 in pices
1T flour
1T br sugar
1/2 t salt
1/2 t cumin
1/4 t cardamon
1/8 red pepper
3T balsamic vinegar
 
1T br sugar
2T capers
1/4 c raisins
1T olive oil
1/4 c orange juice

Instructions
Rub pork w/ first set of ingredients. heat oil in large nonstick skillet med high heat. add pork and cook 2 min . turn pork over, cook 1 min. Add vinegar mixture. cook 1 mi till sauce htickens and pork is done
parmasan couscous. 1 can chcken broth to boil in saucepan, stir in 1C couscous, remove from heat. cover let stand 5 min.stir in 2T parmasen cheese and 2T chopped fresh parsley
