     Mojito Pepper Chicken

Ingredients
6 Boneless, Skinless Chicken Breasts, Cut Into 1 Inch Cubes
1 Tsp Cumin
1 Tsp Cayenne
1 Tsp Salt
1 Tsp Paprika
3 Tblsp Butter
4 Cloves Garlic
2 Shallots, Thinly Sliced
4 Limes ( Used For Zest and Juice)
 
1/2 Cup Light Rum
1 Yellow Bell Pepper, Cut Into 1 Inch Cubes
1 red Bell Pepper, Cut Into 1 Inch Cubes
3 Tblsp Fresh Mint
2 Tblsp Fresh Thyme
3 Roma Tomatoes, Diced
3 Cups Cooked Rice

Instructions
Season chicken breasts with cumin, cayenne, salt, and paprika. Place chicken breasts in a slow cooker, add butter, garlic, shallots, 2 tablespoons lime zest, 1/4 cup fresh lime juice, and rum. Cover and cook on medium for 4-6 hours. Stir in cubed bell peppers, mint, thyme, and tomatoes. Cover and continue to cook for an additional 1-2 hours. Remove Mojito Pepper Chicken to a serving platter with rice.
