     Chicken taco mac

Ingredients
1 lb boneless chicken breast cut in half
1 box (12 oz) garden radiatore or rotini pasta
1 sweet red peper , cored and diced (1 cup)
1 Tblsp unsalted butter
1 Tbsp all purpose flour
1 1/2 tsp chili powder
1/2 tsp salt
1 1/4 c milk
8 oz pepper jack cheese, shredded about 2 cups
 
3 scallions, trimmed and sliced
1 1/2 c crushed lime flavored tortilla chips

Instructions
Bring a large pot of water just to boiling. Add chicken breast and reduce heat to gentle simmer. Cook chicken in a barely simmering water for 12 minutes. Remove to cutting board, return water to boil add a little salt to the water.
add pasta to boilig water and cook as per pkg directions, 9 minutes. Add pepper during last minute of cook time. drain. Meanwhile, melt butter in a medium size saucepan over medium heat. Whisk in flour, chili powder and salt. add milk in a thin stream, whisking constantly. Bring to a simmer over medium-high heat; simmer2 minutes. Remove from heat and whisk in shredded cheese.
with 2 forks or your hands, shred chicken into bite size pieces. In a large bowl, combine pasta and pepper, chicken scallions and cheese sauce. Stir until well blended, top with crushed chips and serve.
