BLEND tomatoes, chipotle peppers and water in blender until smooth.
HEAT dressing in large saucepan on medium-high heat. Add onions; cook 5 min. or until crisp-tender, stirring frequently. Add tomato mixture; bring to boil.
STIR in chicken; cover. Simmer on low heat 10 min. Spoon into serving dish; top with sour cream. Serve with tortilla chips.
