4 Boneless, skinless chicken breasts

1/2 Cup lemon juice
|
|
1 Teaspoon salt
|
|
1/2 Teaspoon black pepper
|

1/2 Cup flour
|

2 Tablesppons butter
|
|
2 Tablespoons vegatable oil
|
|
1 (14 oz) Can chicken broth
|
|
1 Pound small red potatoes, quartered
|
|
|

1 Cup baby carrots
|
|
Dash of thyme
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Dip thawed chicken in lemon juice and sprinkle with
salt and pepper. Dredge in flour. Heat butter and
oil in skillet over medium heat.

Add chicken, cook for 3 minutes on each side. Remove
from skillet.
|

|
Add broth to skillet, stir in remaining lemon juice
and bring to boil.
|
|
|
Add potatoes, carrots, chicken and thyme. Reduce
heat and summer 8 minutes.
