     Lemon Thyme Chicken

Ingredients
4 Boneless, skinless chicken breasts
1/2 Cup lemon juice
1 Teaspoon salt
1/2 Teaspoon black pepper
1/2 Cup flour
2 Tablesppons butter
2 Tablespoons vegatable oil
1 (14 oz) Can chicken broth
1 Pound small red potatoes, quartered
 
1 Cup baby carrots
Dash of thyme

Instructions
Dip thawed chicken in lemon juice and sprinkle with salt and pepper. Dredge in flour. Heat butter and oil in skillet over medium heat.
Add chicken, cook for 3 minutes on each side. Remove from skillet.
Add broth to skillet, stir in remaining lemon juice and bring to boil.
Add potatoes, carrots, chicken and thyme. Reduce heat and summer 8 minutes.
