     Peggy's Tamale pie

Ingredients
Pie Crust-
2 1/2 cups cornmeal
2 tsp. baking powder
1 tsp. salt
1 Tbs. oil
1 cup water
Filling-
4 cups boiled water
 
2 cups instant refried or black beans
1/4 cup tomato base
2 tsp. garlic
1 tsp. pepper
1 tsp. cumin
1/2 lb. sliced cheese
cayenne and hot sauce to taste

Instructions
Mix crust ingredients until moistened; dough will resemble biscuit dough. Flatten into pan and cook until dryish on top, using round the clock method.
When crust is done, spread a little margarine over the surface and poke a few holes in the hot crust to drench and moisten.
Add all filling ingredients except cheese to boiled water, stir until mixed, and take off heat. Place half of cheese on crust, then spread filling mix over the top and add remainder or cheese.
Cover and bake with twiggy fire until cheese on top is brown and bubbly. If pie starts to burn, a small amount of water on the side of the pam will steam and melt the cheese.
