     Blueberry Ice Cream Topping

Ingredients
1/2 cup sugar
1 tbsp cornstarch
1/8 tsp salt
1/4 cup water
1 cup fresh or frozen blueberries
1 tsp lemon juice
1/4 tsp lemon rind, finely grated
 

Instructions
Combine sugar, cornstarch and salt in 1-quart microwavable dish. Stir in water. Add blueberries. Cover with vented plastic wrap. Microwave on High for 3-1/2 to 5 minutes, or until mixture has boiled at least 1 minute. Stir in lemon juice and peel.
