     Yogurt Pancakes with Blueberries and Flaxseed

Ingredients
2 C plain Greek yogurt
4 egg whites
1/4 C coconut oil
2 Tbs pure vanilla
1/4 C natural honey
1 1/2 tsp baking powder
3/4 tsp baking soda
2 C unbleached spelt flour
2 Tbs ground flaxseed
 
1 C fresh blueberries

Instructions
Place all ingredients, except blueberries, in a bowl. Use an eggbeater to blend all ingredients until a smooth batter results.
Fold blueberries into the batter
For fluffier pancakes, let the mixture stand for 20 minutes. Otherwise, use a small ladle to pour batter onto a hot pan and cook for about 1 minute on each side. Serve.
