     Apricot-Oat Bars

Ingredients
1/2 cup natural creamy no-sugar-added peanut butter (or other nut butter)
1 tsp pure vanilla extract
2 cups old-fashioned rolled oats
2/3 cup dried apricots, coarsely chopped
1/2 cup walnut halves, coarsely chopped
1/4 cup Splenda
3 large egg whites
1/4 tsp salt
 

Instructions
Heat the over to 350. Line a 9x9 baking pan with parchment paper.
In a large cowl, whisk together the peanut butter, vanilla, and 1/4 cup water. Add the oats, apricots walnuts, sugar substitute, egg whites, and salt. Mix with your hands to combine. Transfer to a pan and pat with moistened hands until even. Bake for 15 minutes, r until crisp and set.
Cool in the pan briefly, then using the overhand, lift out of the pan and cut immediately.
