     PENNE PRIMAVERA

Ingredients
2 tsp Olive Oil
1 C onion, sliced thin
1 1/2 C Zucchini, sliced thin
1 C Red Bell Pepper, sliced thin
1 tsp Garlic, minced
1 1/2 C Plum Tomatoes, quartered
2 Oz Goat Cheese (feta), crumbled
Salt and Pepper
1 1/3 C Penne Pasta
 
1/2 C Basil (fresh) torn into small pieces
1/2 C Parmesan cheese, grated

Instructions
Put on water for pasta Heat olive oil in skillet. Add onion. Saute 2 minutes Add all veggies except tomatoes. Saute 5 minutes Add tomatoes. Lower heat and cook 5 minutes, . Add goat cheese, salt and pepper. Remove from heat.
Cook pasta. Drain, leaving 2 TBS in saucepan. Return pasta to pan and add veggies. Serve dish - sprinkle with basil and parmesan cheese.
