Pinch of sugar
2-1/2 c warm water (110 degrees)
3 pks active dry yeast
8 c flour
4 t salt
additional luke warm water

Stir sugar into warm water and sprinkle with yeast. Let stand 5 minutes or until surface is frothy. Stir gently to moisten any dry particles remaining on top. Sift flour and salt into a large bowl. Pour in yeast liquid, combining to make a dough. On a floured surface, knead dough 5 to 10 minutes until smooth and elastic. Sprinkle dough generously with flour so the surface does not form a crust. Cover and let rise at room temperature 2 to 3 hours. Sprinkle large baking sheets with flour.
Quickly knead risen dough. Divide into 4 pieces. Share each piece ihto a long roll; place on floured baking sheets. Cover dough and let stand in a warm place on floured baking sheets. Cover dough and let stand in a warm place 30 minutes. Preheat over to 425 degrees.
Slash loaves diagonally several times with a fine sharp knife; brush with lukewarm water. Bake 15 minutes then reduce heat to 350 degrees and bake 15-20 minutes longer or until loaves are golden brown and crusty.
