     Twice Baked Potato Casserole

Ingredients
3 pounds of red potatoes
4 tablespoons (1/2 stick) butter, at room temperature
1 cup sour cream
1 teaspoon salt
1/2 pound bacon, cooked until crisp and crumbled
2 cups shredded Cheddar divided
1/2 cup finely chopped green onions
1 egg, lightly beaten
1 roasted garlic bulb
 
3 tablespoons chopped fresh chives

Instructions
Preheat the oven to 350 degrees F.
Boil potatoes in large pot until fork tender. Drain.
Place potatoes in a large bowl and add butter, sour cream, and salt. Mash until chunky-smooth. Add the bacon, half of the grated Cheddar, the green onions, eggs, and chives. Mix thoroughly.
Place the seasoned potato mixture in the prepared casserole. Bake for 50 minutes, or until bubbly around the edges and heated through and top with remaining cheese and bake for 10 more minutes until cheese is melted and lightly golden. Serve hot.
