     Creamy Parmesan Rice with Chicken

Ingredients
1 T. olive oil
1 lb. boneless skinless chicken breasts
3 cloves garlic, minced
1 1/2 C. converted rice, not instant
2 cans chicken broth
1 C. Parmesan cheese
1 C. frozen peas, thawed
 

Instructions
Heat oil in skillet; add chicken and cook 5-7 minutes until lightly browned on both sides.
Add garlic; cook briefly. Stir in rice and broth. Bring to boil. Cover; reduce heat and simmer 20 minutes or until chicken is done.
Remove chicken; remove skillet from heat and stir in cheese and peas. Cover and let stand 5 minutes.
