     Roasted Salsa

Ingredients
24 Large Red Tomatoes
2 quartered Onion
2 green peppers quartered
5 Jalapenos
2 cans green chilis
3 Tbl Garlic Pepper
3 Tbl Garlic Salt
1/2 tsp cumin
3 tsp oregano
 
1 bunch parsley chopped finely
1 bunch Cilantro chopped finely
2 tsp Cayenne Pepper
1/2 cup olive oil
1/2 cup Cider Vinegar
4 Fresh Garlic Cloves crushed

Instructions
In large roasting pan combine, tomatoes, peppers, onions, jalapenos, garlic salt and pepper,fresh garlic cloves cilantro and parsley. Cover and bake at 300 degrees for 5 hours.
After 5 hours let cool and drain excess liquid from roasting pan. In food processor puree the tomato mixture and put in large sauce pan.
Add green chilies, cumin, oregano, cayenne pepper, garlic salt and pepper and vinegar. Simmer on stove top for 1 hour.
You can freeze or can. Look up instructions for canning if you don't know the directions.
