     Peanut Butter Cream Sandwich Cookies

Ingredients
1/2 C chunky Peanut butter
1/2 C shortening
1 C packed brown sugar
1 egg
1 tsp vanilla
1 tsp baking soda
1/8 tsp salt
11/4 C. flour
granulated sugar
 
3/4 C chunky peanut butter
2/4 C marshmallow creme
3 T milk
3/4 tsp cinnamon
1/4 tsp ground cumin
3 T powdered sugar

Instructions
beat peanut butter and shortening on medium speed for 30 seconds. Add brown sugar, egg and vanilla. Beat in baking soda, salt and as much flour as you can. Stir in any remaining flour.
Form dough into balls and place on ungreased parchment lined baking sheets. Flatten with a fork dipped in sugar. Bake at 350 for 7-8 minutes, or until lightly browned. Cool on wire rack, then spread peanut butter cream on one cookie and sandwich together. Store for 3 days or in freezer for a month.
For peanut butter cream- mix remaining ingredients together and then gradually add powdered sugar.
