     Beef Tenderloin w/creamy risotto

1/4 cup sundried tomato dressing, divided
3/4 cup chopped zucchini
1/4 cup shredded carrot
1/4 cup chopped red pepper
1 cup instant white rice, uncooked
3/4 cup chicken broth
2 Tbsp. dijon mustard
1/2 cup milk
2 beef tenderloins (4 oz)

Heat 1 Tbsp. of dressing in saucepan. Add zucchini, carrot, red pepper--cook until tender. Stir in rice, broth, milk, mustard.
Bring to boil & cover. Remove & let stand 5 minutes. Cook steaks in remaining dressing on medium heat until done.
