In a 5 qt crock pot, add onion, chicken, broth, green pepper, jalapeno, 1 1/2 tsp cumin, 1/4 tsp. cayenne & 1/4 tsp salt. Cover and cook 4 hours on high.
Remove chicken and shred once slightly cooled. Return to crock pot with remaining seasoning. Add tomatoes, corn, and beans. Stir in corn meal. Sprinkle with cheese when done.
