     Smashed Potatoes with Yogurt and Chives

Ingredients
3 pound(s) (6 large) Yukon Gold potatoes
2 tablespoon(s) margarine or butter
3/4 teaspoon(s) salt
1/4 teaspoon(s) pepper
2 container(s) (6 ounces each) plain nonfat yogurt (1 1/3 cups)
1/4 cup(s) chopped chives
 

Instructions
Place unpeeled potatoes (do not pierce) in very large microwave-safe bowl. Cover with vented plastic wrap. Microwave on High 15 to 16 minutes or until fork-tender. Uncover (leaving any accumulated liquid in bowl); add margarine, salt, and ground black pepper. With potato masher, coarsely mash potatoes.
Stir in yogurt and half of chives until combined. Spoon into serving bowl; cover with plastic wrap to keep warm. If necessary, reheat in microwave just before serving. Sprinkle with remaining chives to serve.
