     Greek Lentil Soup

Ingredients
1 lb. lentils
2 large onions, chopped
1 head garlic, cloves peeled, large ones halved
2 bay leaves
¼ cup red wine vinegar (or more to taste)
½ cup extra virgin olive oil
1 tbs. sea salt
pepper, to taste
 

Instructions
In a large kettle, cover the lentils with 2 inches of water. Boil for 5 to 10 minutes. Drain and discard liquid. Cover with 2 quarts cold water (you can use chicken broth for part of the liquid, if you like). Add all other ingredients. Bring to a boil, reduce heat and simmer until lentils are tender, about 45 minutes.
This soup is easy and tasty. I like to serve with a dollop of sour cream for extra flavor.
