Preheat oven to 325. In skillet, cook sausage until golden brown. About 6-8 minutes. Transfer to a bowl.
In the same bowl with the sausage, add scallions. pepper, and cheese. Mix.
In a separate bowl, whisk eggs, egg whites and milk.
Distribute egg mixture into muffin tins. Scoop a heaping tablespoon of sausage mix into the egg.
Bake for 25 minutes or until golden brown. Let cool on wire rack for 5 min.
Place rack on top of pan, and flip quiches out. Allow to cool completely.
