1/2 cup cornmeal

1 tablespoon baking powder

pinch cayenne pepper

1 egg

1/4 cup butter, melted

1 1/4 cup grated cheddar cheese

Instructions |

|
Heat oven to 425. Mix flour, cornmeal, baking powder, salt and cayenne pepper.

Beat eggs with milk and butter. Combine wet and dry ingredients until moistened

Stir in 1 cup of the cheese and spoon batter into greased muffin tins. Sprinkle tops with remaining cheese. Bake 15 to 20 minutes until golden.
