     Lemon mini tarts

Ingredients
2 egg yolks
3 tablespoons melted butter
1/2 cup powdered sugar
2 tablespoons fresh squeezed lemon juice
1 tablespoon lemon peel
1 tablespoon sugar
24 mini frozen phyllo shells
mint leaves and raspberries, both optional
 

Instructions
Heat oven to 350 degrees F. Whisk together egg yolks,lemon juice and peel,butter,powdered sugar,and sugar in a small bowl.
spoon 1 teaspoon of mixture into each frozen phyllo shell. bake 13 to 15 minutes,or until center is set.
If desired,garnish with one mint leaf and 1 raspberry
