     Peach Cobbler

Ingredients
6 Lg Ripe Peaches Peeled Pitted and Thickly Sliced
About 6 Cups
2/3 Cup Firmly Packed Brown Sugar
1 Tbsp Cornstarch
1 Tbsp Fresh Lemon Juice
1/2 Tsp Each Cinnamon and Ground Nutmeg
1 1/2 Cups All Purpose Flour
1/4 Cup Plus 1 Tsp Sugar
1 1/2 Tsp Baking Powder
 
1/2 Tsp Salt
1/4 Cup Unsalted Butter,Chilled
2/3 Cup Milk
1/2 Tsp Vanilla

Instructions
To make filling combine peaches brown sugar cornstarch lemon juice cinnamon and nutmeeg in a large saucepan. Cook overlow heat until peaches are just tender and syrup has thickened about 10 min.Pour filling into buttered 2qt baking dish.
Mix together the flour 1/4 cup sugar baking power and salt in a large bowl.Using 2 knives or pastry blender,cut in butter until mixture resembles coarse crumbs. Add milk and vanilla, quickly blend with sppatula. Drop heaping tablespoons of bisket mixture on top of peaches, covering them completely sprinkle with remaining sugar. Bake for 25 to 30 minutes at 375 degrees,or until top is golden and biskets are cooked thtough. Let stand 5 minutes before serving Makes 6 servings
