     Low-Fat Banana Muffins

Ingredients
2 1/2 cups all- purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 cup unsweetened applesauce
1 cup sugar
3 egg whites
3 to 4 medium ripe bananas, mashed (about 2 cups)
1 tsp vanilla extract
 

Instructions
In a large bowl,combine flour, baking powder, baking soda and cinnamon. Combine remaining ingredients just until moistened. Coat muffin cups with cooking spray or us paper liners. Fill cups 2/3 full.
Bake 350 for 20 to 25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.
