     Mexican Rice Casserole

Ingredients
2 cup - cooked white rice
1 (10 3/4 oz.) can - celery soup
1 (4 oz) can - chopped green chilis (drained)
1/2 cup (2 oz) - shredded sharp chedddar cheese
1/2 cup (2 oz) - shredded monterey jack cheese
1/2 cup - lite sour cream
3/4 tsp. - garlic powder
1/2 tsp. - ground cumin
1/2 cup - additional cheese (either style)
 
1 sm. jar - pinentos (optional)

Instructions
Combine all ingredients except the last 1/2 cup additional cheese, in a mixing bowl. Spoon into a 1 1/2 quart baking dish.
Bake at 325 for 20 minutes. Remove from oven anspread the additional 1/2 cup fo cheese over casserole top. Return to oven and bake an additional 5 minuites.
