     Cinnamon Chip Muffins

Ingredients
2-1/2 cups all-purpose flour
1 pkg (3.4 oz) instant French vanilla pudding mix
2 tsp ground cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 eggs
1 cup buttermilk
1/2 cup vegetable oil
 
1/2 cup honey
1 tsp vanilla extract
1 cup miniature semisweet chocolate chips

Instructions
In a large bowl, combine flour, pudding mix, cinnamon, baking powder, baking soda and salt. In another bowl, combine eggs, buttermilk, oil, honey and vanilla; add to dry ingredients. Whisk for 1-2 minutes or until combined. Fold in chocolate chips.
Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
