     Sweet potato souffle

Ingredients
3 c. cooked, mashed sweet potatoes
1 c. light brown sugar
1/4 tsp. salt
1/2 stick butter/margarine
1 tsp. vanilla
2 eggs
1 small can of Carnation milk
Topping-
 
1 c. light brown sugar
1 c. chopped nuts (pecans)
1/2 c. grated coconut (opt)
1/2 stick butter/margarine
1/2 c. flour

Instructions
Blend all ingredients together. Put in baking dish and cover with topping.
Bake at 325° for 30 minutes or until lightly browned.
Serving Suggestions
thanksgiving and/or christmas
