seed and dice chipotle peppers. combine with avocados, lime, sour cream and salt to taste in food processor. pulse to your liking for guacamole. pour into serving bowl, cover with plastic wrap and refrigerate.
heat skillet to med high, brown chorizo 2-3 minutes. remove from pan into strainer.
add oil, garlic, and shrimp to skillet, saute 2-3 minutes. add chorizo back to skillet.
heat electric griddle to medhigh and spray with cooking oil. put cheese on half of tortilla and place on griddle. spoon chorizo mixture on top of cheese and fold tortilla in half. turn half way through cooking until cheese is melted and tortilla is golden.
