Blend onion, hinger, lengkuas, garlic, turmeric powder. Crush white pepper, and mix in the blended items. Continue mixing in mortar. Fry in some oil until aromatic with serai.
Once aromatic, add the chicken and fry until cooked. Add water to cover 2 thirds and simmer to make stock. Separately shallow fry some sliced leeks and add to stock. Add salt and some sugar.
Sambal soto 1- Boil 1 large chilly, half a tomato, one clove garlic. Then pound. Add 1 calamansi juice, salt and sugar.
