     Southwest Stuffed Peppers

Ingredients
Bell Peppers
Spanish rice (cooked)
Black beans
Corn
Salsa
Tomato Paste
Pepper jack cheese (shredded)
 

Instructions
Preheat oven to 325. Boil water. Cut tops off peppers, remove seeds. Cook peppers in boiling water for 5 minutes.
Mix salsa, tomato paste, corn, beans, cheese, and rice. Stuff into peppers. Top with salsa and cheese. Bake for ~20 minutes.
