     YORKSHIRE PUDDING

Ingredients
2 cups flour-sifted
1 tsp salt
2 cups half and half
4 eggs
1/2 tsp nutmeg
2 tbs butter-melted
1/2 cup beef drippings
 

Instructions
Sift flour and salt in bowl-add half and half. Stir vigorously or use blender. Add eggs one at a time -beat well after each addition. Add nutmeg and 2 TB butter. Chill at least 1/2 hour before roast is done.
Pour 1/2 cup drippings into 8x8 pan. Set in oven to heat. Pour batter into sizzling pan and bake at 450 for 20 minutes. Reduce heat to 350 until brown and crisp. Cut into squares. Batter can be made ahead.
Don't panic when batter gets huge and puffy-it will sink nicely after cooking. One of those recipes that comes out a little differently every time you make it!! I use double recipe to feed my family of 8.
Serving Suggestions
Prime Rib or any kind of beef roast. Serve with au jus.
