3 Cups Flour (Unbleached All-Purpose)

3/4 Cup Sugar
|

1 tsp Baking Soda
|

1 TBS Baking Powder
|

1 1/2 tsp Salt
|

2 Eggs, well beaten
|
| |
1 3/4 Cup Buttermilk
|
| |
1 1/2 Cups Currants
|

6 TBS Butter (divided) 4TBS melted and cooled

Instructions |

Preheat Oven to 350.
Sift flour, Sugar, Baking Soda, Baking Powder, Salt. Add Currants to coat.

Mix wet ingredients. Butter, Eggs, Buttermilk. mix into dry ingredients.
|
|
|
|
Grease round pan with 2 TBS of Butter. Line with cut round of wax paper to cover only the bottom.
Pour mix into pan.
|
|
|
|
Bake for 35-40 minutes, until set. Cool to room temp and serve with the best meal ever. Corned Beef and Cabbage!
