     Tuna and White Bean Salad

Ingredients
20 Asparagus spears
1 Tablespoon Fresh Flat Leaf Parsley
2 Tablespoons White Wine Vinegar
2 Tablespoons Fresh Lemon Juice
2 Tablespoons Extra-Virgin Olive Oil
1 Tablespoon Butter, melted
1/4 Teaspoon Salt
1/4 Teaspoon Black Pepper
1 Chp Cherry Tomatoes, quartered
 
1 15ounce can White Beans
4 Cups Salad Mix from a bag or Torn Lettuce
2 5 ounce Cans Tuna packed in Water, drained

Instructions
Steam asparagus for 3 minutes, rinse with cold water.
Combine parsley, vinegar, lemon juice, olive oil, butter, salt and pepper in a small bowl, wisk to combine.
In a small bowl min beans, tomatoes and 1/4 cup dressing minture. Toss gently.
Place one cup on lettuce on a plate, top with 5 asparagus spears, 1/2 Cup bean/tomato mixture and 1/2 can of tuna. Drizzle with 1 Tablespoon remaining dressing.
