     Carrot Cake

Ingredients
4 beaten eggs
1 1/2 cups wesson oil
3 cups carrots-shredded
2 cups flour
2 cups sugar
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
 
Frosting
8 oz softened cream cheese
1/2 cup butter
1 box confectioners sugar (2 cups)
1/2 cup nuts (optional)

Instructions
Sift- flour, sugar, soda, cinnamon, salt. Grease and flour 9 x 12 cake pan Bake at 350 for 35-40 minutes
Frost when cooled
