     Lemon Tarragon Asparagus

Ingredients
1 Pound Asparagus, trimmed
1/4 Teaspoon Black Pepper
1/4 Teaspoon Lemon Zest
1 Tablespoon Lemon Juice
2 Teaspoons Fresh Tarragon, Chopped fine
1 Teaspoon Garlic, minced
1 Teaspoon Shallot, minced
1/2 Teaspoon Dijon Mustard
1/2 Teaspoon Salt
 

Instructions
Cook asparagus in boiling water for 2-3 minutes, until tender crist. Drain.
In a small bowl combine rind, lemon juice, tarragon, garlic, shallot, dijon mustard, salt and pepper.
Arrange asapargus on platter Drizzle on sauce, toss to coat.
