     Hot Cashew Chicken Salad

2 cups chopped romaine lettuce
1 cup chopped fresh spinach
1 small can mandarin oranges(drained)
3 tablespoons soy sauce
1 tablespoon honey
1/4 teaspoon ginger
3 tablespoons water
3 tablespooons cooking oil
1 lb diced chicken breast
1 garlic clove (minced)
1/4 cup cashew pieces
3 tablespoon minced onion

In a large salad bowl combine lettuce, spinach and mandarin oranges and set mixture aside. In a smaller bowl combine soy sauce, honey, ginger, and water and set sauce aside.
In a wok, or large frying pan, heat the cooking oil over medium heat and add the chicken breast and stirfry until its barely opaque throughout about 5 minutes. Add minced onion and garlic clove to cooking chicken, and cook for another minute.
Add sauce to cooking chicken and cook for another minute. Once chicken and sauce are both cooked remove from heat and add to the large salad bowl and toss.
