Brown meat slowly, spoon off excess fat. Add next 5
ingredients, simmer uncovered 30 minutes. Stir
occasionally.
Cook noodles. Beat eggs, add remaining ingredients
to eggs, except mozzarella. Preheat oven to 375º.
Layer half the noodles in a 13 x 9 x 2 inches baking
dish. Spread half the ricotta filling on top. Spread
half the mozzarella then half the mean sauce on top.
Repeat.
Bake for 30 minutes. Let stand 10 minutes before
serving or assemble early, refrigerate, and bake for
45 minutes.
