1/2 cup julienne-sliced sun-dried tomatoes packed in oil, halved
1 Tbsp. salt free seasoning blend
2 green onions, chopped
Instructions
Place potatoes in 3 qt pan and add enough water just to cover potatoes. Cover and bring to boil over high heat. Reduce heat and simmer, covered, 10 minutes or until done, drain.
Dressing-
Whisk together olive oil, vinegar, tomatoes and seasoning in a small bowl. Place drained potatoes and chopped onions in serving bowl. Pour dressing over potatoes and toss gently to coat. Chill.
