     Chicken and Black Bean Enchiladas

Ingredients
1 lb. chicken breast (uncooked)
1 can black beans
1 1/2 cup Mexican Shredded cheese blend
1-4oz can of diced green Chile peppers
2 tsp. cumin
1 tsp. garlic powder
6 or 7 tortillas
2-cans of red enchilada sauce (I recommend 1 big bottle of Trader Joes Red Enchilada Sauce)
 

Instructions
To make filling, cook chicken breast in a pot of boiling water until done (about 20 min.). Let cool and dice chicken into pieces. Drain and rinse can of black beans. In a medium bowl combine diced chicken, black beans, 1 cup cheese, can of green Chile pepper, cumin and garlic powder.
Preheat oven to 400 degrees. Spray 9X12 baking dish. Pour 1 cup of enchilada sauce into the baking dish and spread evenly. Place approx. 1 cup of filling on each tortilla and roll them up. Roll enchiladas in the sauce to moisten them up and place in baking dish seam side down. Pour remaining sauce over enchiladas.
Bake for 20-25 min. Remove and sprinkle cheese over the top and bake for 5 more minutes.
