Melt half the butter in saucepan/microwave and set aside. Sift flour, baking powder, soda, salt and sugar in a large mixing bowl. Stir to combine.

Make a well in the centre of the dry ingredients. Add the eggs, buttermilk, 100 ml of milk and the melted butter and whisk together to make a thick smooth batter. Add more milk if the batter is too thick. Stand the batter for 5 minutes.

Heat a non-stick frying pan over medium-low heat. Butter the pan with a portion of remaining butter. Pour 1/3 cup batter into the pan to form 2-3 pancakes. Cook for 1-2 minutes or until bubbles appear on the surface of the pancake. Turn over and cook for 30 seconds. Repeat with remaining batter and butter.
