Add potatoes, cook and stir over med heat approx. 5 minutes or until heated through.
Beat egg beater, water, salt and pepper, pour over onion/pepper/potato mixture.
When eggs set, lift edges, letting uncooked portion flow underneath. Just before eggs are completely set, place cheese slices over half the omelet. Fold in half. Serve immediately.
