Preheat over to 450 degrees. Combine 2 cups buttermilk baking mix, 2/3 cup milk and 1/2 cup shredded cheddar cheese with a wooden spoon until soft dough forms. Beat vigorously 30 seconds. Drop dough by heaping tablespoonsful onto an ungreased cookie sheet. Bake 8 to 10 minutes, until golden brown.
