     Pepper Crusted Salmon

1/4 cup soy sauce
2 cloves garlic, pressed
4 tsp lemon juice
2 tsp sugar
4 6-oz salmon fillets
1 tbsp pepper
1/4 cup olive oil

Combine first 4 ingredients in a plastic bag; add salmon. Refrigerate for 10 minutes. Remove salmon from bag and discard remaining marinade.
Pat dry; press pepper into both sides of salmon. Heat oil in a large cast iron skillet on medium heat; saute salmon 2-3 minutes per side.
Drain on a paper towel.
Serve with steamed rice and steamed broccoli.
