     Creole Okra

Ingredients
3 lbs. okra, cut
1 large onion, choppped
1 or 2 firm tomatoes, chopped
1 tsp. salt
Red pepper and garlic powder to taste
1 tsp. lemon juice
3 tbsp. bacon drippings or olive oil
 

Instructions
In heavy skillet, heat oil or drippings. Sprinkle okra with lemon. Brown okra and onions. Add tomatoes and seasonings.
Place cover on skillet and steam about 10 minutes.
Okra will try to stick to pan and form crust, so keep lifting and turning with spatula.
