Prepare SALSA FRESCA recipe (SEE), chill for two hours.
In oil, pan-fry chicken-breast until done (about 10 minutes per side). Sprinkle generously with poultry seasoning. Slice into strips, halving strips if necessary.
Place tortillas in warm oven 3-5 minutes. Plate tortillas and add (optional shredded lettuce), chicken strips, generous Salsa Fresca, (and optional cheese). Fold as a burrito for convenience, or as a soft taco.
NOTE- Go very light on optional lettuce and cheese.
Serve with SPANISH RICE (see recipe).
