     Warm Mushroom Salad

Ingredients
1 tbsp butter
1 clove garlic, peeled, and lightly crushed
3 cupsmixed mushrooms, thinly sliced ( prereably an equal mix of cremini, oyster and shitake)
1 tsp fresh thyme, finely chopped
salt
1 tsp soy sauce
1/4 cup dry white wine
pepper to taste
1 tsp dijon mustard
 
1 tsp white wine vinegar
1 1/2 tbsp olive oil
4 cups of winer greens, torn into bite-size pieces
1/4 cup aged white cheddar, finely crumbled
1 1/2 tbsp walnuts, coarsely chopped

Instructions
In a large saute pan heat butter over medium-high heat. Add garlic clove and cook for 30 seconds.
Add mushrooms, thyme and a pinch of salt. Saute for 5 minutes until mushrooms begin to soften and release their water.
Add soy sauce and white wine and continue suateing for 5 minutes or until the mushrooms become golden. Discard garlic clove. Season to taste with salt and pepper
combine dressing ingredients and then toss with winter greens. Top with cheddar and walnuts.
